Grappa ist eine traditionelle italienische Spirituose, die aus Trester, also den Rückständen der Weinherstellung hergestellt wird. Das sind Schalen, Stiele und Kerne von Weintrauben. Die Herstellung von Grappa hat eine lange Geschichte und wird seit Jahrhunderten in Italien praktiziert.
Die Herstellung von Grappa beginnt mit der Destillation des frischen Tresters, der nach der Pressung der Trauben übrig bleibt. Diese Rückstände werden eingemaischt und vergoren, um einen niedrigalkoholischen Wein zu erzeugen, der dann destilliert wird, um den Alkoholgehalt zu erhöhen und Grappa zu produzieren. Der Destillationsprozess und die Maische sind gleichermaßen entscheidend für den Geschmack und die Qualität des Endprodukts.
